Durch die Betaoxidation können Fettspeicher im Stoffwechsel als Energiequelle genutzt werden. Diese Reaktion findet in dem Teil der Zelle statt, der mitochondriale Matrix genannt wird. L-Carnitin ist dabei für den Transport langkettiger Fettsäuren in die Matrix essentiell.
